This is the latest iteration of mps austin’s pasta sauce, and it is hands down the best thing I’ve ever made. I had so much trouble finding a good Italian restaurant that I ended up going to the one I had in my favorite seafood restaurant in Austin. The sauce is made of dried tomatoes that have been marinated with a mixture of spices and tomatoes. I used fresh tomatoes because its the freshest tomatoes I have, and the spices give it that extra kick. You definitely want to use the freshest tomatoes possible, and use as many spices as you can get your hands on. It gets really spicy at the end which is awesome because its very easy to overdo it with the sauce.
I was so surprised to taste this sauce at the Taste of Austin this year, it blew me away. I knew it was authentic, but I didn’t know it was so good. It has a very fresh, sweet taste with a nice bite to it but it also has a hint of vinegar. Its very tasty but I would definitely take a less spicy sauce if I had it.

Now, I’m not one to try to be a health nut when I’m cooking, and I was super-picky about the amount of spices that went into the sauce. I guess the spicy and mild are a bit more important than I originally thought. A few extra pinches of chili powder will make a huge difference in the flavor of a sauce. I didn’t want to go crazy with the pinches of black pepper though. I want to keep the chili powder for other recipes, but I want to keep the black pepper for the sauce.
That said, I wouldn’t be surprised to see black pepper in the sauce if the chili powder tastes really good. I think it would be really cool to have a chili-spiced sauce with a nice kick, though.
